This is my second post about the Disney Type 1 Diabetes Bookshelf - And this time I'm cooking with Disney! Like all the books on the shelf, "Dishing It Up Disney Style" is a Lilly Disney collaboration and it's a fine one at that!

But the book isn't just about desserts. It includes breakfast, lunch, dinner, appetisers and desserts, all with easy to follow recipes that include nutritional information and carb count!
So not only can you and your family make the recipes together, you can actually bolus for them as well!
So me being me, I decided to test a few out in the Diabetesalicious test kitchen on my own.
Because if I was going to write about the cookbook, I needed to actually cook from the cookbook!
I'd always wanted to make chili and I actually had all the ingredients to make "Baloo's Beef Chili".
Except I had ground turkey on hand and a yellow Bell pepper instead of the green Bell pepper that the recipe called for.
Still, I forged ahead and sliced and diced and followed the directions with my substitutions.
Adding the onion, pepper, turkey, garlic, black beans crushed tomatoes, tomato juice, stock, spices etc., in the exact order the recipe called for and it soon I realized that I was making some pretty fine looking chili!

They become 'Minnie's Frozen Fruit Bites." Taste: Seriously, they remind me of frozen cheese cakes/pastry and I could stop eating them! Serving Size: 1 Cookie Calories: 68 Total Fat: 4 grams Carbs: 7 grams Fiber: 0 Protein: 2 And they were SO GOOD, down right addicting) and incredibly easy to make - AND BOLUS FOR. YUMMMMY!!! Ally has been looking at our Dishing it up Disney Style cookbook every day, asking can we try this? Her #1 pick is Minnie's Frozen Fruit Bites! Can't wait to give them a whirl (as soon as this mama gets to the store)!!
